Lemon Fudge Cake

Ingredients for

Lemon Fudge Cake

125g/4 Ounces butter
175g/6 Ounces caster sugar
175g/6oz self raising flour
1 teaspoon baking powder
2 large free-range eggs
Zest of 1 large unwaxed Lemon
65ml/ 2.5 floz milk

Lemon fudge Icing
1/4 lb butter
1 tablespoon honey
3 tablespoons milk
2 cups icing sugar

Method for lemon fudge cake

Preheat Oven 180 degrees C

Place all the ingredients into a food processor and blend until really smooth. Pour into a cake tin and bake in the preheated oven for 45-50 minutes

To make the fudge icing, combine butter, honey and milk in saucepan.Gently heat until butter melts, when it is simmering remove from the heat and sift in icing sugar, beating until the
